Indonesian Ginger Chicken - Make Your Eating Pleasure

It was my turn to cook (which I do maybe three times a year) and you can never go wrong with Ina Garten. After looking through her most popular recipes on Food Networks website, I settled on Indonesian Ginger Chicken since after all VW is from Indonesia.

Indonesian Food – Ayam Penyet

This is an Indonesia dish. A fried chicken (Ayam) dish and the chicken is smashed before it is fried or it can also be smashed before serving. The chicken is marinated for six hours in a blend of spices that include garlic, pandan leaves, then half-boiled and fried to a certain crispiness.

The important ingredient in this dish is it’s sambal (Chilli Sauce). It is a blast; not too sweet and not that sour but blazing hot hot hot!

Satay from the East – Satay Malaysia

The undisputed Malaysian Street Food – Chunks of grilled marinated chicken and beef on skewers, served with the conventional sides of cucumber and ‘nasi himpit’ as well as their signature grilled thick, white bread.

Continuing the Kelantan 2009 saga (read the first chapter on Pasar Besar Siti Khadijah & various Kelantanese kuih-muih), let’s see what we had for dinner on one of the nights spent in Kota Bharu; the capital of Kelantan.

Chicken Pastel

Chicken Pastel is a hearty casserole dish that is usually served with pie crust on top. Not to be mistaken with the Brazilian Pastel, the crust of this dish is very similar to that of buko pie and empanada.

Fried Chicken

Fried chicken is chicken coated with a breading mixture or batter and pan fried (or deep fried if that is the case). Usually, the meaty part of the chicken is used for this dish but who could resist fried chicken wings. The purpose of the breading (or batter) is to make the outer-part of the chicken crispy (crispy-licious ummm!).

Cashewed Chicken

Cashewed Chicken is an Oriental dish that definitely fits the Filipino Palate. Thinly sliced chicken breast is coated with egg and cornstarch then stir fried until crispy and golden brown. An array of colors brought about by the different vegetables makes this dish more appealing. Let’s not forget the roasted cashew nuts that adds flavor and texture to the dish.

Spicy Chicken Feet

“Chicken Feet” is a favorite oriental ingredient and has made its way in many Asian recipes and cookbooks. As a typical Filipino food, Chicken feet can be seen in the streets of Manila and are mostly sold as a street food. This part of the chicken has little meat (with majority of the edible meat consist of the skin and tendons) but is still consumed mostly as “pulutan” (appetizer).
